I haven't posted much this summer.
That's partly because I haven't cooked much this summer.
The big kids both have jobs that take them through the dinner hour most nights.
Bob works until dinner time then wants to go for a bike ride.
That leaves me and the Bonus Baby.
I hate to say it, but I don't really feel like firing up the grill for the two of us.
We might graze leftovers.
(Leftovers from what? you ask. She never cooks anything!)
Or get some sushi then head for the ice cream stand.
Sometimes I'll text the various family members to see if they might be home for dinner.
If I get a consensus, I'll take the plunge and go grocery shopping for something other than milk and Go Lean Crunch.
Like tonight.
Dinner seemed like a go.
I visited the new Bow Street Market in Freeport (it's awesome) and picked up some bistro steaks and corn. Got the steaks in a little marinade, made a salad.
And picked out a corn recipe I've been wanting to try from The Maine Summers Cookbook
I've been paging through this book for a couple of weeks and the grilled corn idea caught my attention. With jalapeno citrus butter. Oh yes.
Then I get the news that the two men in the family have other plans.
Involving football.
They will not be dining at home.
Sigh.
The steaks can wait until tomorrow night, but I want that corn now.
So yes, I lit the grill solely for the corn. That's how badly I want it.
And the Bonus Baby and I ate grilled corn for dinner.
It was perfection. The butter mixture gave it a sweet/tangy flavor, that when mixed with the charred kernels, was irresistible.
Who needs steak?

Me, I just want to cook a meal and have my whole family present to enjoy it.
Grilled Corn with Jalapeno Citrus Butter
adapted rom The Maine Summers Cookbook
4 Tbsps. unsalted butter
2 Tbsps. orange juice concentrate
juice of one lime
1 tsp. grated lime zest
1 Tbsp. molasses
1/4 cup fresh cilantro, finely chopped
1-2 Tbsp. jalapeno pepper, seeded and minced
6 ears of fresh corn, shucked
coarse salt and pepper to taste
Prepare a gas or charcoal grill to medium high heat. Clean and oil the rack.
Melt the butter in a small heavy saucepan over medium heat. Stir the orange juice concentrate, lime juice, zest and molasses into melted butter. Remove from heat and stir in cilantro and jalapeno. Stir until well combined. Add salt and pepper.
Place the corn directly on the oiled grill rack and cook, turning occasionally, until charred spots appear. Brush the corn generously with butter mixture. Cover the grill and cook 2-3 minutes more. Remove corn to platter and brush with more citrus butter. Serve immediately, passing additional salt.

ReplyDeleteI want to go shopping with with you and cook a meal (I need to learn how to do some cooking besides grilling so I can make a decent meal at my apartment). Lets plan a day and we can make something delicious!

Okay..... Can you believe that I have not even been to Boothbay Harbor once this season?! Let's GO!!!
Yeah, I've been gorging on corn this summer - it's the best, freshest, sweetest corn I've had in a loooong time. Before the summer ends, I'd really like to make the corn and tomato lasagnettes from the Stir cookbook. Gotta do it when the produce is at its peak!

One thing I would like to do before summer ends.. is enjoy it to it's fullest..because it's over before we know it.

Have a real, old-fashioned clam-bake with lobsters, clams, new potatoes, corn, beer, wine and about 6 and a half pounds of butter!!! (Would have to do it stove-top, (grill the corn), but that's OK, too.)

ReplyDeleteFried clams! It's an end of summer treat because if I partake too early in the season it sets the "decadence bar" too high. Loved the corn recipe. In my younger days when trying to stretch the grocery money I lived on corn on the cob and a baked potato. It was under a dollar!

ReplyDeleteMmm...corn! I wish my husband would forget about dinner. I keep testing to get him to make lunch H's big meal of the day, but good luck. One thing left to do this summer is cash in on the gondola ride at sunset my husband gave me last Christmas (how sad is that???). The good thing is, it's summery here all the way to October, so I've got time! Hope you're having a great one yourself :)

ReplyDeleteAnother thing I want to do before summer ends, is to go have fried clams at the beach. I've had some already, but in restaurants. I want to have some at a beach front clam shack.

ReplyDeleteThere's nothing better than summer in Maine and a large part of that is the delicious food! The seafood is the best and all the fresh fruits and vegetables that go along with make every meal in Maine a casual feast! I'd love to win this cookbook! And I'd really like visit Maine again before this summer is over. If I can't manage that, I'd at least like to have a clambake type party in the backyard with friends.
ReplyDeleteI am just now finally getting a chance to read your blog and it is really terrific! I enjoyed meeting you on the warm summer's night in the garden of your cooking club's gathering. It was so delightful to partake of everyone's culinary skills especially my sister-in-law's garlic custard. Definitely something I wouldn't choose to make. LOL Hope you are well and the idea of having a cookbook for Maine cookin' is exciting! Come on down South for some grits and blackeyed peas!!
